Serve this easy and refreshing slaw alongside grilled meat or tacos. For help cutting a mango, go here.
- ingredients
- 1/2 head green cabbage, cored and sliced very thinly $1
- 2 mangos, sliced thinly $3
- 1 carrot, shredded or julienned $0.25
- 1 cup mung bean sprouts $1
- 1 small bunch mint leaves, chopped $1
- 1 green jalapeño, diced $0.25
- 2 tbsp olive oil Pantry
- 2 tbsp rice vinegar $1.50 for 10 oz.
- 1 tbsp sweet chili sauce $2 for 10 oz.
- 1 clove garlic, minced Pantry
- 1 small piece ginger, minced (about 1 tsp) $0.50
- 1/8 cup toasted sliced almonds $2 for 10 oz
Total Cost of Ingredients $12.50
Directions
Toss cabbage, mango, carrot, mung beans, mint leaves and jalapeño together in a bowl. Set aside.
Whisk together olive oil, rice vinegar, sweet chili sauce, garlic and ginger. Drizzle over salad mixture and toss well.
Serve garnished with toasted sliced almonds.
Serves 4.
