Sweet Potato Oven Fries with Sriracha Aioli

Easy, delicious and even relatively healthy. Even the worst of cooks can pull these off.

Ingredients

1 large yam or 2 small yams, scrubbed and cut into 3" x 1/2" sticks $1
1 tbsp olive oil Pantry
1 small bunch flat-leaf parsley, chopped $0.75
4 tbsp. mayonnaise Pantry
1-2 tsp Sriracha or other hot sauce $2 for 10 oz.
Salt and pepper to taste Pantry

Directions

  1. Preheat oven to 425 degrees F.
  2. Spread yams on a baking sheet. Drizzle with the olive oil. Bake for 15-20 minutes or until crisp out the outside and tender inside. Toss with salt, pepper and parsley.
  3. To make the aioli, simply stir Sriracha or other chili sauce into mayonnaise and serve alongside the fries.
